Sustainable Bronzeville
 
Explore Bronzeville, the African American Neighborhood where McCormick Place is located, in a 2.5 hour mobile workshop.  Bronzeville is known as the home of Gospel, Jazz and the Electric Blues and has a mission to become a Sustainable International Heritage Tourism Destination.  The workshop highlights three key areas:  1) McCormick Place:  World’s largest LEED convention center, 2) Illinois Institute of Technology (IIT):  A vision to become the most sustainable urban university in the United States and 3) The historic Black Metropolis, a candidate for national heritage area designation. Option 1: The Plant

The Plant is a new kind of organization in a very old building. It’s part vertical farm, part food-business incubator, part research and education space - and it will be entirely off the grid., The Plant is being repurposed into a net-zero energy vertical farm and food business operation. A complex and highly interrelated system, one-third of The Plant will hold aquaponic growing systems and the other two-thirds will incubate sustainable food businesses by offering low rent, low energy costs, and (eventually) a licensed shared kitchen.

the Publican
The Publican has crafted an eclectic menu inspired by simple farmhouse fare in a space evocative of a European beer hall. Featuring pork and fish/seafood preparations, the menu is best described by Executive Chef Paul Kahan and Chef de Cuisine Brian Huston as “pristine product, simply prepared” Meat dishes center upon pork, all certified organic and sourced from Dyersville, Iowa. Anchored by a wide selection of housemade terrines and charcuteries, the menu changes daily to reflect the seasonal availability of products. A selection of vegetables rounds out the menu, including such seasonal items as daily aïoli, roasted broccoli, pine nuts and Italian buratta and cauliflower sformato with Marcona almond romesco.

Classic Italian dishes with a contemporary flair have made Trattoria No.10 a Chicago favorite since 1989. Specialties on the daily menu include unique, homemade ravioli, freshly prepared risotto, inventive pastas, fresh fish selections, veal scallopine and filet of beef. The subdued elegance of the interior with arched walkways, murals and original art provides an intimate atmosphere that is perfect for business lunches, pre-theater dining, romantic dinners or private parties.
